  • 2 large lobster tails (about 68 ounces / 170225 grams each), preferably fresh or thawed from frozen
  • 4 tablespoons (60 grams) unsalted butter, softened
  • 3 cloves garlic, minced fresh
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon fresh parsley, finely chopped
  • ½ teaspoon paprika (optional)
  • ½ teaspoon salt, or to taste
  • Freshly ground black pepper, to taste
  • 1 teaspoon olive oil

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Using kitchen shears, carefully cut down the top shell of each lobster tail, stopping just before the tail fin. Gently pull the meat upward, resting it on top of the shell (piggybacking).
  3. Pat the lobster meat dry with paper towels.
  4. In a small bowl, combine softened butter, minced garlic, lemon juice, chopped parsley, paprika, salt, and pepper. Stir until fully blended.
  5. Brush the lobster meat generously with half of the garlic butter mixture, coating every nook and cranny.
  6. Place the lobster tails on a baking sheet lined with foil or parchment paper. Drizzle olive oil lightly over the shells.
  7. Roast in the oven for 12-15 minutes, depending on tail size, until the meat is opaque and firm but tender.
  8. About 3 minutes before done, remove the baking sheet and brush the remaining garlic butter over the lobster meat. Return to the oven to finish roasting.
  9. Remove from the oven and let rest for 2 minutes to allow juices to redistribute.
  10. Serve immediately with extra lemon wedges on the side.

Do not overcook the lobster to avoid rubbery texture; aim for firm but slightly springy meat. Use fresh garlic for best flavor. Rest lobster for 2 minutes after roasting to keep it juicy. For dairy-free option, substitute butter with vegan margarine or olive oil.
