  • 1 cup (225g) unsalted butter, melted and slightly cooled
  • 1 1/2 cups (300g) packed brown sugar
  • 2 large eggs, room temperature
  • 2 tsp vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 cup (about 2 medium) apples, peeled and diced
  • 1/4 cup (60ml) pure maple syrup
  • 1/4 cup (60g) unsalted butter
  • 1/2 cup (60g) powdered sugar
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking pan with parchment paper or grease it lightly to prevent sticking.
  2. Peel and dice your apples into small cubes. Set them aside for later.
  3. In a large mixing bowl, whisk together the melted butter and brown sugar until smooth. Add the eggs and vanilla extract, whisking until fully combined.
  4. In a separate bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet ingredients, mixing gently with a spatula until just combined. Avoid overmixing.
  6. Gently fold in the diced apples, ensuring they’re evenly distributed throughout the batter.
  7. Pour the batter into the prepared baking pan, spreading it out evenly. Bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  8. Let the blondies cool completely in the pan before adding the glaze.
  9. In a small saucepan, melt the butter over medium heat. Stir in the maple syrup and bring to a gentle boil. Remove from heat and whisk in the powdered sugar and vanilla until smooth.
  10. Once the blondies are cool, pour the glaze evenly over the top. Use a spatula to spread it out if needed. Let the glaze set for about 10 minutes before slicing into squares.
