  • 810 pounds spiral ham, pre-cooked and spiral sliced (natural or bone-in recommended)
  • 1 cup (240 ml) pure maple syrup
  • 1/2 cup (100 g) packed brown sugar
  • 2 tablespoons (30 ml) Dijon mustard
  • 1 tablespoon (15 ml) apple cider vinegar
  • 1/2 teaspoon (1 g) ground cloves
  • 1 medium fresh pineapple, peeled, cored, and cut into 1-inch chunks
  • 2 tablespoons (28 g) unsalted butter
  • 1/4 teaspoon (0.5 g) ground cinnamon (optional)
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat oven to 325°F (163°C). Remove spiral ham from packaging and pat dry. Place on roasting rack in pan, flat side down.
  2. Lightly season ham with freshly ground black pepper.
  3. In a bowl, whisk together maple syrup, brown sugar, Dijon mustard, apple cider vinegar, and ground cloves until smooth.
  4. Brush glaze generously over ham, making sure to get into spiral slices. Reserve some glaze for basting.
  5. Cover ham loosely with aluminum foil and place in oven.
  6. Bake for about 1.5 hours (10 minutes per pound), basting every 20 minutes with reserved glaze.
  7. While ham cooks, melt butter in medium skillet over medium heat. Add pineapple chunks and cinnamon, cook 8-10 minutes, stirring occasionally until caramelized and golden brown.
  8. During last 15 minutes of baking, remove foil and brush ham with glaze for a sticky finish.
  9. Check internal temperature with meat thermometer; ham should reach 140°F (60°C).
  10. Remove ham from oven and let rest 10-15 minutes before slicing.
  11. Serve ham slices topped with warm caramelized pineapple.

Use a meat thermometer to avoid overcooking; baste every 20 minutes for best glaze buildup. Rest ham before slicing to keep it juicy. For dairy-free, substitute butter with coconut oil for caramelizing pineapple. Leftover glaze can be simmered to thicken before serving.
