These adorable, bite-sized mini apple pies are packed with cinnamon-spiced apples and a buttery, flaky crust. Perfect for any occasion, they’re easy to make and a crowd-pleaser!

  • Pie crust (store-bought or homemade)
  • 2 cups diced apples (Granny Smith or Honeycrisp)
  • 1/4 cup brown sugar
  • 2 tablespoons granulated sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon all-purpose flour
  • 1 tablespoon lemon juice
  • Butter (about 1/4 teaspoon per pie)
  • 1 egg
  • 1 tablespoon milk
  • Optional: coarse sugar, caramel sauce

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a muffin tin with non-stick spray or butter.
  2. Roll out the pie crust on a lightly floured surface to about 1/8-inch thickness. Use a round cutter or glass slightly larger than the muffin tin cups to cut circles for the pie bases. Press each circle into the cups, ensuring the edges come up the sides.
  3. In a large mixing bowl, combine diced apples, brown sugar, granulated sugar, cinnamon, nutmeg, flour, and lemon juice. Toss until the apples are evenly coated.
  4. Divide the apple mixture evenly among the prepared crusts in the muffin tin. Add a small piece of butter (about 1/4 teaspoon) on top of each pie.
  5. Roll out remaining pie dough and cut it into strips for a lattice topping, or place smaller circles of dough on top for a closed pie look. Crimp the edges to seal.
  6. Beat one egg with a tablespoon of milk, then gently brush it over the tops of the pies. Sprinkle with coarse sugar if desired.
  7. Bake the pies in the preheated oven for 20-25 minutes, or until the crust is golden brown and the filling is bubbling.
  8. Let the pies cool slightly in the tin before carefully removing them. Serve warm or at room temperature.
