Perfect Pink Champagne Jello Shots Recipe with Fresh Strawberries

A quick and easy recipe for festive pink champagne jello shots adorned with fresh strawberries, perfect for parties and gatherings.

  • 1 ½ cups (360 ml) pink champagne (dry or brut)
  • 3 tablespoons (about 3 packets) unflavored gelatin
  • ½ cup (100 grams) granulated sugar
  • 1 cup (240 ml) water
  • 1 cup (about 150 grams) fresh strawberries, sliced
  • 1 tablespoon (15 ml) lemon juice
  • ½ cup (120 ml) sparkling water (optional)

Instructions

  1. Pour 1 cup (240 ml) of cold water into a medium bowl. Sprinkle the 3 tablespoons (about 3 packets) of unflavored gelatin evenly over the water’s surface. Let it sit for 5 minutes until the gelatin absorbs the water and becomes spongy.
  2. In a small saucepan, combine ½ cup (100 grams) granulated sugar with ½ cup (120 ml) of water. Warm gently over medium heat, stirring until the sugar dissolves completely. Do NOT let it boil; once dissolved, remove from heat.
  3. Add the warm sugar water to the bloomed gelatin. Whisk gently but thoroughly until all gelatin granules are dissolved and the mixture is smooth with no lumps. This usually takes about 2-3 minutes.
  4. Slowly pour in 1 ½ cups (360 ml) of chilled pink champagne and 1 tablespoon (15 ml) of fresh lemon juice. If using, add ½ cup (120 ml) sparkling water here for extra fizz. Stir gently to combine.
  5. Slice fresh strawberries into halves or quarters depending on size. Place a few pieces into each shot glass or silicone mold, arranging them so they’re visible from the outside.
  6. Carefully ladle the pink champagne gelatin mixture over the strawberries in each mold, filling about ¾ full to leave room for the jello to set without spilling over.
  7. Place the molds on a flat tray and chill in the refrigerator for at least 4 hours. Overnight is best if you can wait.
  8. To remove from silicone molds, gently press the bottom until the shot pops out. For glasses, serve as is with a small spoon or straw.

Notes

Do not boil the champagne to preserve bubbles and flavor. Bloom gelatin properly for smooth texture. Use fresh, firm strawberries for best results. Pour gelatin mixture slowly to avoid dislodging strawberries. Chill on a flat surface for even setting. For quicker chilling, use freezer for about 90 minutes but watch carefully to avoid freezing solid.
