Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Trim the pork tenderloin by removing silver skin and excess fat. Pat dry with paper towels.
  3. Rub olive oil all over the pork, then season with salt, black pepper, garlic powder, and smoked paprika.
  4. Heat 2 tablespoons olive oil in an oven-safe skillet over medium-high heat until shimmering. Sear the pork for 2-3 minutes per side until golden brown.
  5. Transfer the skillet to the oven and roast the pork for 20-25 minutes, or until an instant-read thermometer reads 145°F (63°C). Let rest for 5-10 minutes.
  6. While the pork roasts, combine blackberries, balsamic vinegar, honey, and minced shallot in a medium saucepan. Bring to a simmer over medium heat.
  7. Simmer the sauce for 10-12 minutes, stirring occasionally, until thickened. Strain through a fine mesh sieve if a smooth sauce is desired.
  8. Remove from heat and stir in butter and a pinch of salt for a glossy finish. Adjust sweetness or acidity as needed.
  9. Slice the rested pork tenderloin into 1/2 inch thick medallions. Arrange on a serving platter and drizzle with the blackberry balsamic reduction.
