  • 1 cup (200g) granulated sugar
  • 1 cup (200g) brown sugar, packed
  • 1 cup (240ml) pumpkin puree (not pumpkin pie filling!)
  • 1/2 cup (120ml) vegetable oil
  • 4 large eggs, room temperature
  • 1 tsp vanilla extract
  • 8 oz (226g) cream cheese, softened
  • 1/2 cup (115g) unsalted butter, softened
  • 2 cups (240g) powdered sugar
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease the cake pan with butter or non-stick spray, then line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves. Set aside.
  3. In a large mixing bowl, beat the pumpkin puree, granulated sugar, and brown sugar until well mixed. Add the eggs one at a time, beating well after each addition. Stir in the vegetable oil and vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture, folding gently until just combined. Avoid overmixing.
  5. Pour the batter into the prepared cake pan and smooth the top. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  6. Allow the cake to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before frosting.
  7. Beat the softened cream cheese and butter until smooth and creamy. Gradually add powdered sugar, one cup at a time, and beat until fluffy. Mix in vanilla extract and a pinch of salt.
  8. Spread the cream cheese frosting evenly over the cooled cake. Decorate as desired with chopped nuts, cinnamon dusting, or candy pumpkins.
