  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 tablespoons red food coloring (gel or liquid)

  • 1 teaspoon white vinegar
  • 3/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 8 ounces cream cheese, full-fat
  • 1/3 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line your 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal later.
  2. In a mixing bowl, whisk together the melted butter and sugar until smooth. Add the eggs one at a time, then stir in the vanilla extract and red food coloring.
  3. In another bowl, sift together the cocoa powder, flour, and salt. Gradually fold the dry ingredients into the wet mixture, stirring gently until combined. Add the vinegar and mix well.
  4. Pour about two-thirds of the red velvet batter into the prepared pan, spreading it evenly.
  5. For the cheesecake layer, beat the cream cheese and sugar together until smooth and fluffy, about 2-3 minutes. Add the egg and vanilla extract, mixing until fully combined.
  6. Carefully spoon the cheesecake mixture over the red velvet layer in the pan. Smooth it out with a spatula.
  7. Drop spoonfuls of the remaining red velvet batter on top of the cheesecake layer. Use a knife or skewer to swirl the batter into the cheesecake for a marbled effect.
  8. Bake for 35-40 minutes, or until the center is set and a toothpick inserted comes out with a few moist crumbs. Avoid overbaking!
  9. Let the brownies cool completely in the pan before lifting them out using the parchment paper. Slice into squares and serve.
