  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ½ cup (115g) melted unsalted butter
  • ¾ cup (150g) brown sugar
  • ⅓ cup (80ml) pure maple syrup
  • ½ cup (120g) pumpkin puree
  • 2 teaspoons vanilla extract
  • 2 eggs
  • Optional: ½ cup (85g) chocolate chips or ½ cup (60g) chopped nuts like pecans or walnuts

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a medium bowl, whisk together flour, baking powder, ground cinnamon, and salt. Set aside.
  3. In a large bowl, whisk melted butter with brown sugar until combined and smooth. Add maple syrup, pumpkin puree, and vanilla extract. Whisk until fully incorporated.
  4. Gradually add the dry ingredients to the wet mixture, folding gently using a spatula until just combined. Be careful not to overmix.
  5. If desired, fold in chocolate chips or chopped nuts.
  6. Pour the batter into the prepared pan, spreading it out evenly with a spatula.
  7. Bake for 25–30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with just a few moist crumbs.
  8. Allow the blondies to cool in the pan for about 15 minutes. Then, lift them out using the parchment paper and transfer them to a cooling rack. Sprinkle flaky sea salt on top while they’re still warm.
