  • 45 medium fresh strawberries, hulled and quartered
  • 1/2 teaspoon rose water
  • 6 ounces (180 ml) champagne or sparkling wine (brut or extra dry)
  • 1 teaspoon simple syrup (optional)
  • 1 teaspoon fresh lemon juice
  • Ice cubes (for chilling glasses or shaking)
  • Mint leaves (optional, for garnish)

Instructions

  1. Rinse and hull 4-5 medium strawberries, then quarter them. Place them in a small bowl or glass.
  2. Using a muddler or the back of a wooden spoon, gently crush the strawberries until juicy but not completely pureed, leaving some texture.
  3. Add 1/2 teaspoon rose water, 1 teaspoon fresh lemon juice, and 1 teaspoon simple syrup if using. Stir gently to combine.
  4. Chill your champagne flute by placing it in the freezer for 5 minutes or filling it with ice while preparing the mixture.
  5. Remove ice from the glass if chilled that way. Spoon the muddled strawberry mixture into the bottom of the flute, then slowly pour 6 ounces (180 ml) of chilled champagne or sparkling wine over it, pouring gently to preserve bubbles.
  6. Garnish with a fresh mint leaf or a small strawberry on the rim and serve immediately.

Notes

Pour champagne slowly over the back of a spoon to preserve bubbles. Use ripe strawberries for best flavor. Adjust rose water carefully as it is potent. Prepare strawberry mixture ahead but add champagne just before serving to keep fizz fresh. For non-alcoholic version, substitute sparkling water or non-alcoholic sparkling grape juice.
