  • 45 medium-sized sweet potatoes, peeled and cubed (approximately 2 lbs)
  • 1/2 cup unsalted butter, melted
  • 1/2 cup brown sugar (light or dark)
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 2 large eggs, lightly beaten
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • Pinch of salt
  • 1 cup coarsely chopped pecans
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter, melted
  • 1/3 cup all-purpose flour

Instructions

  1. Peel and cube the sweet potatoes into roughly 1-inch pieces. Place them in a large pot, cover with water, and bring to a boil. Cook for about 15-20 minutes or until the potatoes are fork-tender.
  2. Preheat your oven to 350°F (175°C).
  3. Drain the sweet potatoes and transfer them to a large mixing bowl. Use a potato masher to mash until smooth.
  4. Add the melted butter, brown sugar, heavy cream, vanilla extract, beaten eggs, cinnamon, nutmeg, and a pinch of salt to the mashed sweet potatoes. Stir until everything is well combined.
  5. In a separate bowl, combine the chopped pecans, brown sugar, melted butter, and flour. Mix until crumbly.
  6. Spread the sweet potato mixture evenly into your prepared casserole dish. Sprinkle the pecan topping over the top, making sure to cover the entire surface.
  7. Place the casserole in the preheated oven and bake for 30-35 minutes, or until the topping is golden brown and bubbly.
  8. Allow the casserole to rest for 5-10 minutes before serving to let the flavors set.
