  • 6 tbsp unsalted butter, melted
  • 2 tbsp granulated sugar
  • 4 oz dark chocolate, chopped
  • 4 oz milk chocolate, chopped
  • 4 oz white chocolate, chopped
  • 1 cup heavy cream
  • ½ cup whole milk
  • 4 large egg yolks, whisked
  • ⅓ cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tsp pure vanilla extract
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 1 tsp pure vanilla extract
  • Chocolate shavings or sprinkles (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Stir until evenly mixed. Press the mixture into the bottom and sides of your pie dish to form an even layer. Bake for 8-10 minutes, then set aside to cool completely.
  2. Divide the chocolate into three separate bowls—one for dark, one for milk, and one for white. In a saucepan, heat the heavy cream and whole milk over medium heat until steaming but not boiling. In another bowl, whisk the egg yolks, sugar, and cornstarch until smooth.
  3. Slowly pour the hot cream mixture into the egg yolks while whisking constantly to temper the eggs. Return the mixture to the saucepan and cook over low heat, stirring, until thickened (about 5 minutes).
  4. Divide the custard evenly among the three bowls of chocolate. Stir each until the chocolate is fully melted and incorporated. Allow the mixtures to cool slightly.
  5. Pour the dark chocolate layer into the cooled crust and smooth it out with a spatula. Refrigerate for 10 minutes. Repeat with the milk chocolate layer, chilling for another 10 minutes, and then finish with the white chocolate layer. Chill the entire pie for at least 4 hours or overnight.
  6. In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Spread the whipped cream over the chilled pie or pipe it for a decorative look.
  7. Add chocolate shavings, sprinkles, or a dusting of cocoa powder for a finishing touch. Slice and serve chilled.

Notes

Use high-quality chocolate for richer flavor. Chill each layer before adding the next to ensure clean separation. If custard is lumpy, strain through a fine mesh sieve.
