  • 1 teaspoon pure vanilla extract
  • 1 cup (80 g) sweetened shredded coconut
  • 1 cup (240 ml) heavy whipping cream (optional)
  • 1/4 cup (30 g) powdered sugar (optional)
  • 1/2 teaspoon vanilla extract (optional)
  • 1/4 cup (20 g) toasted shredded coconut (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour your cake pans or line them with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  4. Beat in the eggs one at a time, followed by the vanilla extract, coconut milk, and crushed pineapple. Mix until combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.
