  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp ginger
  • 8 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease with cooking spray.
  2. In a mixing bowl, combine softened cream cheese, sugar, egg yolk, and vanilla. Beat until smooth and creamy. Set aside.
  3. In a large bowl, whisk together pumpkin puree, eggs, vegetable oil, granulated sugar, and brown sugar until well combined.
  4. In a separate bowl, sift together flour, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
  5. Gradually fold the dry ingredients into the wet ingredients using a spatula. Mix until just combined—avoid overmixing.
  6. Spoon a layer of pumpkin batter into each muffin cup, filling them about halfway. Add a dollop of cheesecake filling in the center, then top with more pumpkin batter to cover the filling.
  7. Bake for 18–20 minutes, or until a toothpick inserted into the muffin (avoiding the cheesecake center) comes out clean.
  8. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
