Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×9-inch baking pan with butter or cooking spray.
  2. In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, salt, and cinnamon.
  3. In a separate bowl, mix the pumpkin puree, milk, eggs, and melted butter until smooth.
  4. Slowly pour the wet ingredients into the dry ingredients, stirring gently with a spatula until just combined. Avoid overmixing.
  5. Transfer the batter to the prepared baking pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
