Ingredients

Scale
  • 3 tablespoons unsalted butter (about 42 grams), softened
  • 4 cups mini marshmallows (about 120 grams)
  • 6 cups Lucky Charms cereal (about 150 grams)
  • 1 teaspoon vanilla extract (optional)
  • Non-stick cooking spray or extra butter for greasing the pan

Instructions

  1. Lightly grease a 9×13-inch baking pan with non-stick spray or softened butter and set aside.
  2. In a large saucepan over low heat, melt 3 tablespoons (42 grams) of unsalted butter slowly, stirring occasionally to prevent browning.
  3. Add 4 cups (120 grams) of mini marshmallows to the pan and stir continuously until completely melted and smooth, about 5 minutes.
  4. Remove the pan from heat and stir in 1 teaspoon of vanilla extract if using.
  5. Quickly fold in 6 cups (150 grams) of Lucky Charms cereal, mixing gently until evenly coated without over-mixing.
  6. Pour the mixture into the greased baking pan and press firmly but gently with a buttered spatula or wax paper to an even layer.
  7. Let the treats cool at room temperature for at least 30 minutes until firm, or chill in the fridge for 15-20 minutes to speed up setting.
  8. Cut into squares or fun shapes and serve fresh or store in an airtight container.

Notes

Melt marshmallows slowly over low heat to avoid burning. Fold cereal gently to keep treats light and crispy. Grease spatula and pan well to prevent sticking. Chill treats to speed setting if desired. Use a sharp knife dipped in hot water for clean cuts. For vegan adaptation, use coconut oil and vegan marshmallows. For gluten-free, verify all ingredients are certified gluten-free.
