Quick Microwave Corn on the Cob with Herb Garlic Butter

A fast and flavorful recipe for corn on the cob cooked in the microwave and topped with a delicious herb garlic butter. Perfect for busy nights or quick snacks.

  • 4 ears fresh corn on the cob, husked
  • 4 tablespoons unsalted butter, softened
  • 2 cloves fresh garlic, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon fresh thyme, chopped (optional)
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Husk the ears of corn, removing all silk strands. Rinse under cold water and pat dry with a kitchen towel.
  2. In a microwave-safe bowl, combine the softened butter, minced garlic, chopped parsley, thyme, salt, pepper, and lemon zest if using. Microwave on low for 20 seconds to soften and meld flavors, then stir well.
  3. Place the corn ears side by side on a microwave-safe plate. Cover with a damp paper towel or microwave-safe cover.
  4. Microwave on high for 3-4 minutes for 2 ears, or 5-6 minutes for 4 ears. Use oven mitts when removing as the corn will be hot.
  5. Carefully unwrap and test one kernel by piercing with a fork. If not tender, microwave in additional 30-second bursts until done.
  6. Using a spoon or spatula, generously spread the warm herb garlic butter over each ear of corn.
  7. Serve immediately, optionally garnished with extra fresh parsley or a pinch of sea salt.

Notes

Use a damp paper towel or microwave-safe cover to keep corn moist. If butter is not softened, microwave separately for 10 seconds. Avoid overcooking to prevent toughness. Fresh herbs are preferred but dried can be used at half quantity. For dairy-free, substitute butter with plant-based spread.
