  • 3 cups broccoli florets (fresh or frozen)
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 2 tbsp vegetable or canola oil
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp brown sugar
  • 1 tsp cornstarch
  • 3 tbsp water
  • 1 cup jasmine rice, rinsed
  • 1 1/4 cups water
  • Pinch of salt

Instructions

  1. Rinse 1 cup jasmine rice under cold water until water runs clear. Set aside.
  2. Thinly slice 8 oz (225 g) beef against the grain into bite-sized strips.
  3. Cut broccoli into florets about 1 to 1.5 inches wide.
  4. Mince 2 garlic cloves and grate 1 tsp fresh ginger.
  5. In a medium saucepan, combine rinsed rice, 1 1/4 cups water, and a pinch of salt. Bring to a boil over medium-high heat.
  6. Once boiling, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
  7. Remove from heat and let sit, covered, for 10 minutes before fluffing with a fork.
  8. In a small bowl, whisk 3 tbsp soy sauce, 1 tbsp oyster sauce, 1 tsp brown sugar, 1 tsp cornstarch, and 3 tbsp water until smooth. Set aside.
  9. Heat wok or large skillet over medium-high heat and add 2 tbsp vegetable oil.
  10. When oil shimmers and just starts to smoke, add sliced beef in a single layer.
  11. Let beef sear undisturbed for about 1 minute, then stir-fry for another 1-2 minutes until mostly cooked but still tender.
  12. Remove beef and set aside.
  13. In the same wok, add more oil if needed. Toss in broccoli, garlic, and ginger.
  14. Stir-fry for 2-3 minutes until broccoli is bright green and crisp-tender.
  15. Return beef to the wok with broccoli.
  16. Stir the sauce again and pour it over the beef and broccoli.
  17. Toss everything together and cook for another 1-2 minutes until the sauce thickens and coats the ingredients evenly.
  18. Remove from heat.
  19. Serve jasmine rice (about 1 cup per person) with the beef and broccoli stir-fry on top or alongside.
  20. Optional: Sprinkle with sliced green onions or sesame seeds.

Notes

For tender beef, slice thinly against the grain and consider marinating for 10 minutes in soy sauce and cornstarch. Avoid overcrowding the pan to maintain high heat and proper searing. Watch garlic closely to prevent burning. Stir sauce slurry well before adding to avoid clumps. Reheat leftovers gently with a splash of water to keep beef tender and broccoli crisp.
