Refreshing Frozen Strawberry Lemonade Slush

A quick and easy homemade frozen strawberry lemonade slush with fresh mint, perfect for cooling down on warm days with a sweet, tart, and minty twist.

Ingredients

  • 2 cups fresh strawberries, hulled and halved (about 300g)
  • 1/2 cup freshly squeezed lemon juice (about 23 lemons, 120ml)
  • 1/4 cup granulated sugar (50g), adjust to taste
  • 1 cup cold water (240ml)
  • 2 cups ice cubes (about 300g), crushed or whole
  • A small handful fresh mint leaves (about 10 leaves), rinsed
  • Optional: lemon zest from one lemon

Instructions

  1. Rinse and hull the fresh strawberries. Juice the lemons until you have about 1/2 cup (120ml) fresh lemon juice. If using lemon zest, zest one lemon carefully avoiding the white pith.
  2. In a small bowl, mix the granulated sugar with the fresh lemon juice until sugar starts to dissolve to avoid grainy texture.
  3. Add the strawberries, lemon juice and sugar mixture, cold water, fresh mint leaves, and ice cubes into the blender.
  4. Pulse the blender first to crush the ice, then blend on high until the mixture resembles a thick slush. Stop blending once you reach an icy but drinkable texture. Adjust with more cold water or ice cubes as needed.
  5. Taste and adjust sweetness or tartness by adding more sugar or lemon juice if desired. Blend briefly again if additions are made.
  6. Pour the slush into tall glasses immediately. Garnish with a sprig of fresh mint and a thin lemon wheel if desired. Serve right away before the ice melts.

Notes

Use fresh lemons and fresh mint for best flavor. Pulse ice first if your blender struggles. Adjust sweetness gradually. Serve immediately for best icy texture. Leftovers can be stored in the freezer and re-blended before serving. Substitute sugar with honey, agave, maple syrup, or natural sweeteners for vegan or low-sugar versions. Frozen strawberries can be used by reducing ice by half.
