A quick and easy tropical mocktail combining tangy passion fruit, fresh lemon juice, and sparkling water for a refreshing summer drink.

  • 4 medium-sized ripe passion fruits
  • 2 large lemons, juiced (about 1/2 cup or 120 ml lemon juice)
  • 1/4 cup (50g) granulated sugar or honey (adjust to taste)
  • 3 cups (720 ml) chilled sparkling water or club soda
  • Ice cubes as needed
  • Mint leaves (optional, for garnish)

Instructions

  1. Cut each passion fruit in half and scoop out the pulp into a small bowl, yielding about 1/2 cup (120 ml) of pulp. Lightly mash if a smoother drink is preferred.
  2. Roll lemons on the counter, cut, and juice to extract about 1/2 cup (120 ml) fresh lemon juice. Remove any seeds.
  3. In a pitcher, combine lemon juice and sugar or honey. Stir vigorously until sugar dissolves completely (warming honey slightly helps).
  4. Add passion fruit pulp to the lemon-sugar mixture and stir gently to combine.
  5. Slowly pour in chilled sparkling water, stirring gently once or twice to preserve bubbles.
  6. Fill the pitcher or glasses with ice cubes and garnish with mint leaves or lemon slices.
  7. Serve immediately for best freshness and fizz.

Notes

Use cold sparkling water straight from the fridge and add it last, stirring gently to keep bubbles lively. Adjust sweetness to taste. Passion fruit puree can substitute fresh pulp with sweetness adjustment. For a creamier texture, add a splash of coconut water. Store lemon-passion fruit base without sparkling water in fridge up to 24 hours; add sparkling water and ice before serving.
