Refreshing Pomegranate Lime Margarita on the Rocks

Refreshing Pomegranate Lime Margarita on the Rocks - featured image

A crisp and balanced summer cocktail combining fresh lime juice, pomegranate juice, and 100% agave tequila, served on the rocks with a salted rim and garnished with pomegranate seeds.

Ingredients

Scale
  • 2 oz (60 ml) 100% agave blanco tequila
  • 1 oz (30 ml) fresh lime juice
  • 2 oz (60 ml) pure pomegranate juice (100% juice, no added sugar)
  • ½ oz (15 ml) agave nectar or simple syrup
  • Ice cubes (large, clear preferred)
  • Pomegranate seeds (for garnish, optional)
  • Coarse salt (for rimming glass)

Instructions

  1. Rub a lime wedge around the rim of a rocks glass, then dip the rim into a small plate of coarse salt. Set aside.
  2. Squeeze fresh limes until you have about 1 oz (30 ml) of juice. Strain to remove seeds and pulp.
  3. Add 2 oz (60 ml) tequila blanco, 1 oz (30 ml) fresh lime juice, 2 oz (60 ml) pure pomegranate juice, and ½ oz (15 ml) agave nectar into a cocktail shaker or mason jar.
  4. Fill the shaker halfway with ice cubes.
  5. Secure the lid and shake vigorously for about 15 seconds until cold, or stir well if no shaker is available.
  6. Fill the rimmed rocks glass with fresh ice cubes.
  7. Strain the margarita mixture over the ice in the prepared glass.
  8. Garnish with a few pomegranate seeds and a lime wedge.

Notes

Use fresh lime juice for best flavor. Large clear ice cubes melt slower and keep the drink chilled without diluting quickly. Adjust sweetness with agave nectar to taste. Can be stirred if no shaker is available. For a batch, mix ingredients except ice and salt rim and refrigerate up to 24 hours; add ice and salt just before serving.
