Ingredients

Scale
  • 6 medium apples, peeled, cored, and sliced (Granny Smith or Honeycrisp recommended)
  • 1/2 cup granulated sugar (or coconut sugar)
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons unsalted butter, melted
  • 1/2 cup salted caramel sauce (store-bought or homemade)
  • 1/4 teaspoon fine sea salt
  • 1 cup all-purpose flour (or gluten-free blend)
  • 1/2 cup light brown sugar, packed
  • 1/2 cup old-fashioned rolled oats
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon fine sea salt
  • 1/2 cup unsalted butter, cold and cubed
  • Vanilla ice cream (for serving)
  • Extra salted caramel sauce for drizzling (optional)
  • Pinch flaky sea salt (for serving)

Instructions

  1. Preheat oven to 350°F (180°C). Place a 10-inch cast iron skillet on the counter.
  2. Peel, core, and slice apples into 1/4-inch thick wedges.
  3. In a medium bowl, toss apples with sugar, flour, cinnamon, nutmeg, melted butter, and sea salt until evenly coated.
  4. Spoon apple mixture into skillet and drizzle with 1/2 cup salted caramel sauce. Gently stir to distribute caramel.
  5. In another bowl, combine flour, brown sugar, oats, cinnamon, and salt for the streusel.
  6. Add cold, cubed butter and use a pastry cutter or fork to blend until mixture resembles coarse crumbs.
  7. Sprinkle streusel topping evenly over apple mixture without pressing down.
  8. Bake on center rack for 40-45 minutes, until topping is golden and apples are bubbling. Tent with foil after 25 minutes if topping browns too quickly.
  9. Remove from oven and let cool for 10-15 minutes to thicken juices.
  10. Scoop into bowls, top with vanilla ice cream, drizzle with extra caramel sauce, and sprinkle with flaky sea salt.

Notes

Use tart, firm apples for best texture. Cold butter is key for crunchy streusel. For gluten-free, use a 1:1 blend and certified gluten-free oats. Dairy-free options include coconut oil or vegan butter and dairy-free ice cream. Add chopped nuts to streusel for extra crunch. Prep apples and streusel ahead for easy assembly. Store leftovers covered in the fridge up to 3 days; reheat in microwave or oven. Freeze unbaked cobbler for up to 2 months.
