Sausage Tortellini Soup

A quick and comforting soup featuring Italian sausage, cheese-filled tortellini, and a creamy broth, ready in just 30 minutes.

  • 1 lb Italian sausage (mild or spicy)
  • 1 package cheese-filled tortellini
  • 4 cups chicken broth (low-sodium recommended)
  • 1 cup heavy cream
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, thinly sliced
  • 2 cups fresh baby spinach
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese for topping

Instructions

  1. Heat the olive oil in a large pot over medium heat until shimmering.
  2. Add the Italian sausage and cook until browned and cooked through, breaking it up with a wooden spoon (about 5-7 minutes). Remove the sausage and set aside.
  3. In the same pot, add the diced onion and sliced carrots. Cook for 3-4 minutes, until softened. Stir in the minced garlic and cook for 1 minute, until fragrant.
  4. Pour in the chicken broth and bring to a gentle boil. Scrape the bottom of the pot to deglaze and incorporate all flavorful bits.
  5. Reduce the heat to medium-low and add the tortellini. Simmer for 5-7 minutes, or until tender.
  6. Reduce the heat to low. Stir in the heavy cream and fresh spinach, letting the spinach wilt for 1-2 minutes.
  7. Add the cooked sausage back into the pot and stir to combine. Season with salt and pepper to taste.
  8. Ladle the soup into bowls and top with grated Parmesan cheese. Serve warm.
