A quick and easy appetizer featuring smoky bacon-wrapped little smokies coated in a sweet and tangy brown sugar glaze, perfect for parties and casual snacking.

  • 1 pound little smokies sausages
  • 8 to 10 slices thin-cut bacon
  • 1/4 cup brown sugar, packed
  • 1 tablespoon Dijon mustard
  • 2 tablespoons honey
  • 1/2 teaspoon garlic powder
  • Freshly cracked black pepper, to taste
  • Pinch of cayenne pepper (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or foil for easier cleanup.
  2. Partially cook the bacon by placing the slices on the baking sheet and baking for 5-7 minutes until they start to render fat but remain pliable.
  3. In a medium bowl, whisk together brown sugar, Dijon mustard, honey, garlic powder, black pepper, and cayenne pepper if using until smooth and sticky.
  4. Cut the partially cooked bacon slices in half if desired, then tightly wrap each little smokie with a bacon piece. Place each wrapped smokie seam-side down on the prepared baking sheet.
  5. Brush each bacon-wrapped smokie generously with the brown sugar glaze using a pastry brush or spoon.
  6. Bake for 20-25 minutes until the bacon is crispy and the glaze is bubbly and caramelized. Halfway through baking, flip each smokie gently and brush with remaining glaze for even coating.
  7. Let the little smokies rest for about 5 minutes on the baking sheet before serving to allow the glaze to set.

Notes

Partially cooking the bacon before wrapping ensures a crisp finish without overcooking the sausages. Brush glaze generously but save some for halfway through baking to avoid burning. Watch closely near the end to prevent over-browning; tent with foil if needed. Thin-cut bacon works best for wrapping. Can be made ahead and refrigerated before baking.
