Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
  2. Grate the zucchinis using a box grater. Place grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, salt, black pepper, garlic powder, onion powder, rosemary, and thyme.
  4. In a large bowl, whisk eggs until slightly frothy. Add olive oil and Greek yogurt, stirring until smooth.
  5. Fold grated zucchini and shredded cheddar cheese into the wet mixture gently to distribute evenly.
  6. Add dry ingredients to the wet ingredients in batches, folding gently with a spatula until no flour streaks remain. Avoid overmixing.
  7. Pour batter into prepared loaf pan and smooth the top with a spatula.
  8. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. The top should be golden and slightly crisp.
