  • 1 pound kielbasa, sliced into bite-sized pieces
  • 1 pound fresh green beans, trimmed and washed
  • 1 pound baby potatoes, halved or quartered
  • 1 medium onion, sliced thinly
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 tablespoons butter, melted
  • Salt, to taste
  • Black pepper, to taste
  • Paprika, to taste
  • Red pepper flakes (optional)

Instructions

  1. Wash and trim the green beans, slice the kielbasa, and halve or quarter the baby potatoes. Thinly slice the onion and mince the garlic.
  2. In a mixing bowl, toss the green beans, potatoes, and onion with melted butter. Sprinkle with salt, black pepper, paprika, and red pepper flakes (if using). Stir well to coat evenly.
  3. Add the seasoned vegetables to the bottom of the crockpot and spread them out evenly. Layer the sliced kielbasa on top of the vegetables.
  4. Pour the chicken broth into the crockpot, ensuring it covers the bottom to prevent sticking.
  5. Cover the crockpot with its lid and set it to cook on low for 6-7 hours or high for 3-4 hours.
  6. After cooking, check the potatoes and green beans for doneness. They should be fork-tender, and the kielbasa should be warm and juicy.
  7. Stir everything gently before serving to distribute the flavors evenly. Serve hot and enjoy!
