A comforting and indulgent breakfast casserole featuring creamy pockets of cream cheese and crunchy everything bagel seasoning, perfect for easy weekend brunches.

  • 4 large everything bagels, cut into 1-inch cubes (day-old preferred)
  • 8 ounces cream cheese, cut into small cubes (full fat or light)
  • 8 large eggs, room temperature
  • 1 ½ cups (360 ml) milk, whole or 2%
  • 1 ½ cups (170 g) shredded cheese, sharp cheddar or cheddar-mozzarella blend
  • 2 tablespoons everything bagel seasoning
  • 3 stalks green onions, thinly sliced
  • 1 teaspoon Dijon mustard (optional)
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • Butter or nonstick spray for greasing the baking dish

Instructions

  1. Preheat oven to 350°F (175°C). Cut everything bagels into 1-inch cubes. If fresh, toast cubes in oven for 5 minutes to dry out.
  2. In a large bowl, whisk together eggs and milk until combined and slightly frothy. Add Dijon mustard, salt, and black pepper; whisk again.
  3. Add shredded cheese and everything bagel seasoning to the egg mixture; stir gently to combine.
  4. Grease a 9×13-inch baking dish with butter or nonstick spray. Spread half the bagel cubes evenly in the dish.
  5. Scatter half the cream cheese cubes and half the sliced green onions over the bagels. Repeat layering with remaining bagels, cream cheese, and green onions.
  6. Pour the egg and cheese custard evenly over the layered bagels and cream cheese. Press down gently with a spatula to help bagels soak up custard.
  7. Sprinkle a little extra everything bagel seasoning on top.
  8. Bake for 40-45 minutes until puffed, golden on top, and a knife inserted in the center comes out clean.
  9. Let casserole rest for 5-10 minutes before slicing and serving.

Use day-old bagels or toast fresh bagel cubes to prevent sogginess. Room temperature eggs and milk create a fluffier texture. Do not overmix after adding cheese to avoid clumping. Let casserole rest before slicing for better texture. Can be assembled the night before and baked in the morning with extra bake time.
