Savory Garlic Butter Steak Bites with Mushrooms

A quick and easy skillet recipe featuring tender sirloin steak bites seared to perfection and coated in a rich garlic butter mushroom sauce. Perfect for busy weeknights or casual dinners.

  • 1 lb sirloin steak, cut into 1-inch cubes
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon olive oil
  • 3 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 8 oz cremini mushrooms, sliced
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
  • 1 teaspoon fresh parsley, chopped
  • Optional: pinch of red pepper flakes
  • Fresh lemon juice, a squeeze

Instructions

  1. Pat the sirloin cubes dry with paper towels. Season generously with salt and pepper in a mixing bowl, tossing gently to coat evenly.
  2. Place a heavy-bottomed skillet over medium-high heat and add olive oil. Let it shimmer but not smoke.
  3. Add steak cubes in a single layer, avoiding overcrowding. Cook without moving for 2-3 minutes to develop a crust, then turn to brown all sides. Remove steak to a plate once medium-rare to medium (internal temp ~135°F/57°C).
  4. Reduce heat to medium, add 1 tablespoon butter to the skillet. Toss in sliced mushrooms, stirring occasionally. Cook about 4-5 minutes until browned and moisture released.
  5. Stir in minced garlic, thyme, and red pepper flakes (if using). Cook until fragrant, about 1-2 minutes, avoiding burning the garlic.
  6. Add remaining 2 tablespoons butter to the skillet and swirl to melt. Return steak bites to the pan, tossing gently to coat in the garlic butter mushroom sauce. Cook for another 1-2 minutes until heated through and glossy.
  7. Squeeze fresh lemon juice over the dish, sprinkle with chopped parsley, and adjust salt and pepper to taste. Serve immediately.

Notes

Do not overcrowd the pan to avoid steaming the steak. Pat steak dry before cooking for a perfect crust. Use room temperature steak for even cooking. Add garlic after mushrooms to prevent burning. For dairy-free, substitute butter with vegan margarine or coconut oil. Leftovers reheat best in a skillet over medium-low heat.
