  • 6 slices bacon, cooked and chopped
  • 1 cup sharp cheddar cheese, shredded
  • 1/4 cup BBQ sauce
  • 1 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 1/2 tsp garlic powder (optional)
  • 1/2 tsp onion powder
  • 4 burger buns, toasted
  • Optional toppings: lettuce, tomato, pickles, red onion slices, extra BBQ sauce

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy, about 8 minutes. Drain on paper towels and chop once cool.
  2. In a large mixing bowl, combine ground beef with salt, black pepper, garlic powder, and onion powder. Mix gently to avoid toughening the meat.
  3. Divide the beef mixture into eight equal portions (about 3 oz each). Flatten four portions into thin patties about 4 inches in diameter.
  4. Spread 1 tablespoon BBQ sauce on each flattened patty, sprinkle 2 tablespoons shredded cheddar, and 1 tablespoon chopped bacon, leaving a 1/2-inch border.
  5. Place a second flattened patty over each stuffed one and pinch edges to seal, shaping into a neat round patty about 3/4 inch thick.
  6. Preheat grill to medium-high heat (about 400°F). If using charcoal, let coals burn down to consistent heat.
  7. Grill the stuffed patties for 5-6 minutes per side without pressing down. Use a meat thermometer to ensure internal temperature reaches 160°F.
  8. Toast burger buns cut-side down on the grill during the last few minutes until lightly browned.
  9. Assemble burgers by placing patties on buns and adding optional toppings and extra BBQ sauce. Serve immediately.

Notes

Chill patties for 15 minutes before grilling to help them hold together better. Avoid pressing down on patties while grilling to keep them juicy. Use a meat thermometer to ensure doneness. Pre-cook bacon until crispy to avoid sogginess inside the burger. Toast buns on the grill just before serving.
