  • 4 slices sharp cheddar cheese (or American cheese)
  • 4 large leaves of crisp iceberg lettuce
  • 8 slices dill pickles
  • 1 large ripe tomato, sliced
  • 1 small red onion, thinly sliced (optional)
  • 1/4 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon sweet pickle juice
  • 1 teaspoon yellow mustard
  • Pinch of smoked paprika

Instructions

  1. In a mixing bowl, combine ground beef with kosher salt, black pepper, garlic powder, and onion powder. Gently mix until just combined. Divide into 4 equal portions and shape into patties about 3/4 inch thick with a slight indentation in the center.
  2. In a small bowl, whisk together mayonnaise, ketchup, sweet pickle juice, yellow mustard, and smoked paprika. Refrigerate the secret sauce.
  3. Heat skillet or grill pan over medium heat. Slice buns in half and toast cut sides until golden brown, about 1-2 minutes. Remove and set aside.
  4. Increase heat to medium-high and add a small drizzle of oil to the skillet. Cook patties for 3-4 minutes on the first side without moving. Flip, add a slice of cheese on each patty, and cook another 3-4 minutes for medium doneness (internal temp ~160°F).
