  • 1 lb baby potatoes, halved
  • 4 garlic cloves, minced
  • 4 tbsp unsalted butter, melted
  • 1 cup beef broth (low-sodium preferred)
  • 2 tbsp olive oil (optional, for searing)
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Season the beef bites generously with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Add the beef and sear until browned on all sides (about 3-4 minutes). Transfer to your slow cooker.
  3. Wash and halve the baby potatoes. Place them in the slow cooker around the beef.
  4. In a mixing bowl, combine melted butter, minced garlic, and a pinch of Italian seasoning. Pour the sauce over the beef and potatoes.
  5. Pour beef broth into the slow cooker, ensuring everything is coated evenly.
  6. Cover and set the slow cooker on low for 6-8 hours or high for 3-4 hours. The beef should be tender, and the potatoes should be fork-soft.
  7. Sprinkle with chopped parsley before serving for a fresh, vibrant finish.

Notes

Searing the beef is optional but adds depth of flavor. Adjust seasoning to taste and garnish with fresh parsley for a vibrant finish. For a thicker sauce, mix a teaspoon of cornstarch with water and stir it in during the last 30 minutes of cooking.
