  • 1 packet au jus gravy mix
  • 1/2 cup unsalted butter (1 stick), sliced
  • 68 pepperoncini peppers with juice
  • 1/2 cup beef broth (optional)
  • Salt and black pepper, to taste
  • 2 pounds Yukon Gold potatoes, peeled and quartered
  • 1/2 cup whole milk or heavy cream
  • 4 tablespoons unsalted butter
  • 2 ounces cream cheese, softened
  • Salt and freshly ground black pepper, to taste
  • Fresh chives or parsley for garnish (optional)

Instructions

  1. Pat the 3-4 pound beef chuck roast dry and season lightly with salt and pepper.
  2. Place the roast in the slow cooker. Sprinkle the ranch seasoning mix and au jus gravy mix evenly over the top.
  3. Scatter the pepperoncini peppers around the roast, then lay the butter slices on top.
  4. Pour in the pepperoncini juice and beef broth (if using), ensuring enough liquid to create steam but not submerge the roast.
  5. Cover and cook on low for 6-8 hours, or on high for 4-5 hours if short on time.
  6. Check for doneness; the roast should shred easily with a fork. If not, cook for an additional hour.
  7. While the roast cooks, peel and quarter the Yukon Gold potatoes. Place them in a large pot, cover with cold water, bring to a boil, and simmer for 15-20 minutes until tender.
  8. Drain the potatoes and return them to the pot. Add butter and cream cheese, mashing until smooth.
  9. Slowly stir in milk or cream until desired creaminess is reached. Season with salt and pepper.
  10. Slice or shred the roast, spoon some of the buttery pepperoncini sauce on top, and serve alongside the creamy mashed potatoes.
  11. Garnish with fresh chives or parsley if desired.

Pat meat dry before seasoning to prevent steaming and improve flavor. Avoid opening the slow cooker lid during cooking to maintain heat.
