  • 1 large egg, at room temperature
  • 1/4 cup (56 g) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • About 1/2 cup (90 g) rainbow sprinkles for rolling

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a mixing bowl, combine the funfetti cake mix, egg, melted butter, and vanilla extract. Stir gently until just combined; the batter will be thick but pliable. Avoid overmixing.
  3. Pour about 1/2 cup of rainbow sprinkles into a small shallow bowl.
  4. Using a cookie scoop or tablespoon, scoop dough balls about 1.5 tablespoons each (roughly 20 grams). Roll each ball gently between your palms to smooth, then roll the edges in the sprinkles to coat generously.
  5. Arrange the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 8-10 minutes until edges are set but centers are still soft. The sprinkle edges will slightly melt and adhere to the dough.
  7. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
