  • ¾ cup (150g) granulated sugar
  • 1 large egg, room temperature

  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup (160g) cherry jam or preserves (homemade or high-quality store-bought)

Instructions

  1. In a large bowl, cream together the softened butter and granulated sugar using an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
  2. Beat in the egg and vanilla extract until fully combined, scraping down the sides as needed.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the butter mixture, mixing on low speed or folding with a wooden spoon just until a soft dough forms. Do not overmix.
  5. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. On a lightly floured surface or silicone mat, roll the dough to about ¼ inch (6 mm) thickness.
  8. Use a 2-inch (5 cm) round cookie cutter to cut out circles.
  9. Make two small diagonal ‘fang’ cuts on the edges of each cookie using a sharp knife or kitchen scissors.
