  • 2 pounds beef chuck roast, cut into 1-inch cubes
  • 2 tablespoons olive oil or vegetable oil
  • 1 yellow onion, diced
  • 3 garlic cloves, minced
  • 2 cups low sodium beef broth
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons all-purpose flour (or cornstarch for gluten-free)
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon dried thyme (or fresh if available)
  • 2 tablespoons unsalted butter
  • Optional: sliced mushrooms

Instructions

  1. Pat the beef chuck cubes dry with paper towels and season generously with salt and pepper (about 1 teaspoon salt and ½ teaspoon pepper per pound).
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Brown the beef cubes in batches for about 3 minutes per side until a rich crust forms. Transfer browned beef to the crockpot.
  3. In the same skillet, sauté diced onions for 2-3 minutes until softened and translucent. Add minced garlic and cook for another minute until fragrant.
  4. Sprinkle 2 tablespoons of all-purpose flour over the onions and garlic. Stir constantly for 1-2 minutes to cook out the raw flour taste.
  5. Slowly whisk in 2 cups beef broth, scraping up browned bits from the pan. Stir in Worcestershire sauce, dried thyme, and a pinch of salt and pepper. Let simmer for 2-3 minutes until slightly thickened.
  6. Pour the gravy mixture over the browned beef in the crockpot. Add optional sliced mushrooms if using. Dot the top with 2 tablespoons of butter.
  7. Cover and cook on low for 6-8 hours or on high for 3-4 hours until beef is fork-tender and gravy is thick and luscious.
  8. Before serving, stir the gravy. If too thin, mix 1 tablespoon flour or cornstarch with 2 tablespoons cold water and stir in. Cook on high for another 10-15 minutes until thickened.

Notes

Do not skip browning the beef as it adds depth of flavor. Use room temperature beef for even browning. If gravy is too thin, thicken with a flour or cornstarch slurry near the end. Mushrooms are optional but add great umami flavor. For gluten-free, substitute flour with cornstarch or tapioca starch. For dairy-free, use olive oil or dairy-free butter substitutes instead of butter.
