Tender Slow Cooker French Dip Sliders with 5 Easy Steps for Perfect Au Jus

Juicy, tender beef slow-cooked to perfection and served on soft slider buns with rich, flavorful au jus for dipping. Perfect for family gatherings, potlucks, or cozy dinners.

  • 34 lbs beef chuck roast (USDA Choice recommended)
  • 4 cups low-sodium beef broth
  • 1 large yellow onion, sliced
  • 4 cloves garlic, minced
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1216 slider buns (Hawaiian rolls recommended)
  • 2 tbsp butter (optional, for toasting buns)

Instructions

  1. Slice the onion thinly and mince the garlic cloves. Trim excess fat from the chuck roast if desired.
  2. Pat the roast dry with paper towels, then generously season all sides with salt and pepper.
  3. Place the sliced onions at the bottom of the slow cooker. Lay the seasoned beef roast on top. Sprinkle minced garlic over the roast.
  4. Pour the beef broth and Worcestershire sauce over the roast. Sprinkle dried thyme evenly on top.
  5. Cover and cook on low heat for 8 hours (or on high for 4-5 hours) until beef is fork-tender.
  6. Remove the beef from the slow cooker onto a cutting board. Using two forks, shred the meat into bite-sized pieces. Return shredded beef to the slow cooker and stir to soak up the juices.
  7. If desired, melt butter in a skillet and toast the slider buns cut side down until golden and warm.
  8. Ladle some of the rich cooking liquid (au jus) into small dipping bowls. Pile shredded beef onto slider buns and serve immediately with the au jus on the side for dipping.

Notes

If au jus is too thin, mix 1 teaspoon cornstarch with cold water and stir into the cooking liquid. Simmer for 5-10 minutes to thicken. For gluten-free, use gluten-free buns or lettuce wraps. Cheese slices like provolone or Swiss can be added on sliders before serving for a melty finish.
