  • ½ cup (113g) unsalted butter, melted and slightly cooled
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • ¾ cup (150g) packed brown sugar
  • 2 tbsp ground cinnamon
  • 8 oz (225g) cream cheese, softened
  • ¼ cup (57g) unsalted butter, softened
  • 2 cups (240g) powdered sugar, sifted
  • 1 tsp vanilla extract
  • 1 tbsp fresh lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan with butter or non-stick spray and line with parchment paper if desired.
  2. In a medium bowl, whisk together flour, granulated sugar, baking powder, baking soda, and salt until well combined.
  3. In a large bowl, combine cottage cheese, sour cream, melted butter, eggs, and vanilla extract. Mix until smooth but slightly textured.
  4. Gradually fold the dry ingredients into the wet ingredients with a rubber spatula until just combined. Avoid overmixing.
  5. In a small bowl, mix brown sugar and cinnamon for the cinnamon sugar swirl.
  6. Pour half the batter into the prepared pan and spread evenly. Sprinkle half the cinnamon sugar mixture over the batter.
  7. Pour the remaining batter on top and sprinkle the rest of the cinnamon sugar. Use a knife or skewer to gently swirl the cinnamon sugar into the batter.

  10. To make the frosting, beat cream cheese and softened butter until creamy. Gradually add powdered sugar, then mix in vanilla extract and lemon juice. Beat until smooth and fluffy.
