  • 4 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1 cup (125g) all-purpose flour, sifted (use gluten-free flour blend for GF option)
  • 3/4 cup (75g) unsweetened cocoa powder, sifted
  • 1/2 teaspoon salt
  • 1 cup (150g) mini rainbow candy-coated chocolates
  • 1/2 cup (90g) chocolate chips, optional

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang on two sides.
  2. In a large bowl, whisk together melted butter and granulated sugar until combined and glossy, about 1-2 minutes. Add eggs one at a time, whisking well after each addition. Stir in vanilla extract.
  3. In a separate bowl, sift together flour, cocoa powder, and salt. Slowly fold dry ingredients into wet ingredients using a spatula, being careful not to overmix.
  4. Fold in chocolate chips gently. Reserve about 1/3 cup of the rainbow candies to sprinkle on top after pouring batter into the pan. Fold the rest into the batter carefully.
  5. Pour batter evenly into prepared pan and smooth the top. Sprinkle reserved candies over the surface. Bake for 25-30 minutes, checking at 25 minutes with a toothpick; it should come out with a few moist crumbs but not wet batter.
  6. Let brownies cool completely on a wire rack before slicing to set the fudgy texture.
