  • ½ cup (120ml) whole milk (or dairy-free milk like oat or almond if preferred)
  • 8 oz (226g) cream cheese, softened
  • ½ cup (115g) unsalted butter, softened
  • 3 to 4 cups (360-480g) powdered sugar, sifted
  • 1 teaspoon pure vanilla extract
  • 23 tablespoons heavy cream or milk
  • Food coloring gels in pastel shades (pink, blue, yellow, lavender)
  • Optional decorations: edible glitter or sprinkles matching Pokemon themes, mini fondant shapes or Pokemon edible toppers

Instructions

  1. Preheat your oven to 350°F (175°C). Line your muffin tin with cupcake liners or grease well.
  2. In a medium bowl, whisk together 1 ½ cups (190g) flour, 1 ¼ teaspoons baking powder, and ¼ teaspoon salt.
  3. In a large bowl, beat ½ cup (115g) softened butter and 1 cup (200g) granulated sugar with an electric mixer until light and fluffy, about 3-4 minutes.
  4. Beat in 2 large eggs, one at a time, then stir in 2 teaspoons vanilla extract. Scrape the bowl sides with a spatula to combine well.
  5. Add the dry ingredients in three additions, alternating with ½ cup (120ml) milk, starting and ending with dry ingredients. Mix gently after each addition until smooth and thick but pourable.
  6. Spoon batter into each liner about ⅔ full.
  7. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cupcakes cool in the pan for 5-7 minutes, then transfer to a cooling rack to cool completely before frosting.
  9. Beat 8 oz (226g) softened cream cheese and ½ cup (115g) softened butter until smooth and creamy.
  10. Gradually add 3 to 4 cups (360-480g) powdered sugar, beating well after each addition.
  11. Add 1 teaspoon vanilla extract and 2-3 tablespoons cream or milk to reach desired consistency.
  12. Divide frosting into small bowls and add a drop or two of pastel food coloring gels. Stir gently to get soft shades.
  13. Fill piping bags fitted with star tips with each pastel color. Pipe swirls on each cupcake, alternating colors for a whimsical look.
  14. Add sprinkles or edible glitter if desired.

Notes

Use room temperature ingredients for best results. Do not overmix batter to avoid dense cupcakes. Ensure cupcakes are completely cool before frosting to prevent melting. For gluten-free, swap flour with almond or coconut flour. For dairy-free, use dairy-free milk and vegan cream cheese and butter. If frosting is too stiff, add a splash of cream; if too runny, add more powdered sugar. Clean spatula between frosting colors to keep pastel shades neat.
