A creamy, tangy whipped feta dip with a sweet-spicy hot honey drizzle and smoky charred corn, perfect for quick snacks or entertaining.

  • 8 ounces feta cheese, crumbled
  • 4 ounces cream cheese, softened (or full-fat Greek yogurt for lighter option)
  • 1 cup fresh corn kernels (about 2 ears)
  • 2 tablespoons hot honey
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic, minced
  • 1 tablespoon olive oil, plus extra for drizzling
  • Freshly cracked black pepper, to taste
  • Fresh herbs like parsley or dill, optional for garnish
  • Pinch of sea salt, if needed

Instructions

  1. Heat a grill pan or cast iron skillet over medium-high heat. Add fresh corn kernels and cook, stirring occasionally, until blackened and blistered in spots, about 5-7 minutes. Set aside to cool slightly.
  2. In a food processor, combine crumbled feta and softened cream cheese. Pulse until smooth and fluffy, about 1-2 minutes, scraping down sides as needed.
  3. Add minced garlic, lemon juice, olive oil, and freshly cracked black pepper to the whipped cheese mixture. Pulse briefly to combine. Taste and add a pinch of sea salt if needed.
  4. Transfer whipped cheese to a mixing bowl and gently fold in the charred corn kernels using a spatula.
  5. Spoon the dip into a serving bowl. Drizzle generously with hot honey on top. Add an extra swirl of olive oil and sprinkle fresh herbs if desired.
  6. Serve with crispy pita chips, toasted baguette slices, or fresh vegetable sticks. Enjoy immediately or chill for 20-30 minutes to let flavors meld.

Notes

Use room-temperature cream cheese for smooth blending. If feta is crumbly or dry, soften at room temperature for 10-15 minutes before starting. For vegan version, substitute feta with vegan feta or firm tofu and cream cheese with coconut yogurt. Frozen corn can be used if thawed and dried. Avoid freezing the dip as texture may separate.
