Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, cream together 1 cup softened butter and 1 cup granulated sugar until light and fluffy, about 3-4 minutes with a mixer on medium speed.
  3. Beat in 1 large egg and 1 teaspoon vanilla extract until just combined.
  4. In another bowl, whisk together 2 ½ cups flour, ½ teaspoon baking powder, and ¼ teaspoon salt.
